First stop: at the port of Brouage, your guide will tell you how this town was once a strategic port open to the world, before giving way to marshes. A unique natural setting... which today gives rise to exceptional oysters.

Stop off at Tom's oyster shack - Les Perles du Marais: learn about his work as an oyster farmer and taste three different oysters: fine, special and pousse en claires, served with bread, butter and lemon.



Then it's off to the citadel: cross the ramparts, discover the Halle aux vivres, the underground port and the Brouage ice house, via the marsh!



Second gourmet stop - La conserverie artisanale: Here, everything is made on site!

sardine rillettes, mackerel, game terrines, enchaud, pickles, boudin, served with toast... all accompanied by a glass of wine or pineau des Charentes.



The visit continues at the church of Brouage, a place steeped in symbolism, with a nod to ingredients from the New World, like those brought back by Champlain and the great explorers.
