Description

Oyat is the name of Pierre Gagnaire’s restaurant, TT. Oyat is a perennial herbaceous plant typical of sandy coastal environments. It is recognizable by its long, thin, stiff leaves—often bluish-green in color—which can withstand strong winds, drought, and salt spray. This grass dominates the dune flora. Oyat lends a striking visual character to the dunes of Oléron, contributing to the coastline’s identity. It forms a sea of undulating grass along the coastal trails and gives the beach its wild, unspoiled, and quintessentially Atlantic appearance. Baseline - CUISINE DES DUNES “Cuisine des dunes” evokes a cuisine rooted in its natural environment, between sandy soil, sea breezes, and coastal produce. Like the marram grass—the emblematic plant of the Oléron Island dunes—it draws its inspiration from the raw beauty of the landscape, the changing seasons, and local bounty. It is a vibrant, delicate, and deeply rooted cuisine, shaped by the salty breeze of the Atlantic and the demands of the local terroir.
