Chef Ewenn STEPHAN, aquaculturist and head chef, invites you to discover the treasures of his marshes on the banks of the Seudre. Oysters, clams, shrimps: all the flavors of the sea come directly from his own production.
At La Rabale, the plates take you on a journey: from France to Asia, via Spain, in a tasty and subtle fusion of culinary traditions. A unique, authentic and intimate experience in the heart of the village of Hiers, just 2km from the citadel of Brouage.
