This dish is typically Charentais. Its curious name (sometimes pronounced éclade on the mainland) comes from an old patois word, éguiade, meaning "needles" in connection with pine needles.
What's special about eglade is that it's made exclusively with mussels and maritime pine needles (widely distributed throughout the island of Oléron).
